I enjoy reading the recipes in this book. Although it is an older book and doesn't really have the type of recipes I was looking for, it is a fun read and the recipes are easily and readily changed to fit your own liking. I take it camping with us just to enjoy reading it.

Cooking in a dutch oven over an open fire is a little different than using a skillet on a cook stovetop and there's lots of cookbooks explaining such filled with recipes.What makes this one so enjoyable is that it's half recipes proven over and over in real trail camps of the early National Forest Service, and the other half is wonderful stories about the folks who used them. I found myself glancing at the recipes in a hurry to get to the next story of couples living alone in tall timber and vast open ranges 100 years ago. Those folks were l8ke settlers, filled with starch, self reliant, and cut from strong cloth.

What a beautiful book. Not only are the hearty recipes wonderful but the pictures of rangers, campers, and other workers and visitors to national forests are inspiring. When people speak of simpler times I think many have these pictures in mind. Pictures seem to date from 1900s through 1960s (with some more recent pictures) I think. I don't know why but the picture titled "Tourists camping at Grayback Public Campground on the Siskiyou National Forest, Oregon" is striking. It's easy to replace the old vehicle with a Jeep and the canvas tent with a modern dome. But the people transcend time.

The Tips, Facts, and Pictures were very interesting and really added a lot to this book in giving you some background into the early Forest Service and some of their meals. After reading some of the Facts and seeing some of the 1930"s Pictures ...... this alone was worth the price of the book to me. That makes the recipes a very big bonus with a lot of meals I can't wait to try out. A few of the recipes are for a large group, but cutting them down to fit your needs shouldn't be hard. I like the cooking information included with each recipe down to how many coals to use up and down when using your dutch oven. I am well pleased with this purchase and already have a couple of recipes marked to try in the dutch oven real soon.

This is a compilation of recipes as well as a historical book. The pictures in it are incredible and illustrate the "old" days of the Forest Service.I made the Bean Hole Beans several years ago and they were outstanding. Used a #10 Lodge Dutch Oven and was surprised to see how quickly they cooked. One really has to keep an eye on the water in the pot! After one hour, I had to add water and then once again after 30 minutes.... It didn't take 6 hours to cook my beans.The other one I made was the pork roast (but omitted the black-eyed peas). I browned the roast in olive oil and added one can of chicken broth to the pot. Also, added some stuffing mix at the end.Highly recommended as the recipes are good and the historical portion is excellent.

This book has a lot of recipes all using your cast iron cookware over an open fire. But cast iron is not the only method, lots of aluminum foil pouch meals. Cast iron is my own personal favorite way of outdoor grilling. The book opens with a nice into on the Forestry Service, and goes into detail on cooking with cast iron for folks not familiar with the how-to. Well worth a review.There are recipes for breakfast, lunch, dinner, and everything in between and on either side.I really liked the photos and the historical anecdotes included through the book.These recipes are just as relevant today and certainly give a lot of ideas. A fun read, it reminds me a lot of camping with my parents in my younger days.

I am going to rate this book two ways:First as a historical document of how things were it is well worth the price. Great notes, asides and historical bits. As a historical book I would give it 5 stars for those interested in the history of the parks and of the west.As a cook book it does a great job of covering the topic with a bunch of good to very good recipes and useful tips.(For instance butter will keep if stored in a strong salt water and to bake cookies or rolls put a pie pan that just fits into the oven on top of 3 or 4 nickles or quarters--keeps the bottoms from burning.) Those are worth the price alone.Don't be discouraged by the breakfasts; there are a couple of good ones like the chili con queso omelette and the one-eyed buffaloes that are pretty interesting. While there are a lot of stews and chillies in the entries there are some interesting variants and some recipes that are rather more varied and sophisticated. Most of the recipes are things that can be done with limited prep and resources but still sound interesting. The deserts in particular. This is not a dutch oven book per se but a camp cook book. Even includes a couple foil recipes. This book was largely written when "Cholesterol, saturated fat? Whats that? Fat's fat and that's that!".If you decide to experiment with the recipes or substitute oil for butter or lard then try at home. Particularly if you have never baked in a dutch oven! If you mess up at home you can order Chinese or Pizza rather than go hungry.The reason that I am only giving the book 4 stars (excellent) is that it has a lot of repetition in the recipes.Still a great buy and an excellent read.

I loved the bits of letters and recollections from Forest Service employees and wives, living and no longer living, as much as the recipes. An excellent book. I hope the friends of the FS will construct a similar book someday for the second hundred years -- or even the 50 years that follow this book; recipes used in the out-of-doors. I have been trying the recipes at home to see which tickle my taste buds. Those I will cook while tent camping (for weeks each summer).
